Hudson Valley Foie Gras, the largest foie gras producer in the U.S., has agreed to remove the word “humane” from its advertising and website as a result of a lawsuit brought by the Animal Legal Defense Fund (ALDF). The ALDF argued that the production of foie gras is by definition inhumane, because the ducks must be force fed in order to grow unnaturally large livers up to eight times the normal size. ALDF also argued that the deceptive use of the word “humane” encouraged consumers to choose Hudson Valley products over other alternative products that might actually be more humane.
